Broiled Orange-Chili Chicken Breasts
Ingredients:
4 boneless chicken breast halves with 1 salt, to taste 1 freshly-ground black pepper, to taste 1/4 cup fresh orange juice 1 tbsp canola oil 1 tbsp chili powder 1 tsp grated orange rind 1 garlic clove, pressed 1/4 tsp cayenne pepper, (optional)
Instructions:
Sprinkle chicken breasts with salt and pepper. In a large resealable plastic bag, mix orange juice, oil, chili powder, orange rind, garlic and cayenne pepper. Add chicken breasts; toss to coat. Refrigerate 6 to 8 hours.
Heat broiler. Position broiler rack 6 inches from heat source. Broil chicken 12 to 15 minutes, turning halfway through cooking time, just until cooked through.
This recipe yields 4 servings.
