Fruit Squares




Ingredients:

1 cup apple, unpeeled finely diced
1/4 cup raisins
1/4 cup dates, chopped
1 egg, beaten
1/3 cup brown sugar, lightly packed
1/4 cup vegetable oil
1/2 tsp vanilla
1/2 cup flour
1/2 tsp baking soda
1/2 tsp cinnamon

Instructions:

Line 8x8 inch baking pan with wax paper.

In medium bowl, combine apples, raisins and dates. In large bowl,
combine eggs, sugar, oil and vanilla.

In a third bowl, combine flour, baking soda and cinnamon. Add to egg
mixture. Stir in fruit.

Spread in prepared baking pan. Bake at 350F about 20 min or until
tester inserted in center comes out clean.

Preparation 15 min, cooking about 20 min.

12 servings, each 110 calories, 1.2 g protein, 4.7 g fat, 16.4 g
carbohydrate, .8 g fibre

The metaphor of the melting pot is unfortunate and misleading. A more accurate analogy would be a salad bowl, for, though the salad is an entity, the lettuce can still be distinguished from the chicory, the tomatoes from the cabbage.
