Green On Green




Ingredients:

1 package frozen chopped spinach, thawed, drained well
2 cup mayonnaise
1/4 cup chopped white onion
1 small garlic clove, minced
1 tbsp lemon juice
1 medium cucumber, cut round medallions
1 ripe olive slices or pimiento, for garnish

Instructions:

Put first 5 ingredients in blender at high speed to mix well. Refrigerate
at least 4 hours (overnight is best).

While very cold, form small balls with spinach mix and place each one on a
cucumber medallion. Top with a slice of ripe olive or pimiento and arrange
on serving plate.

Approximately 1 carb gram per medallion.
