Almond Custard Recipe
Ingredients:
1 gelatin, unflavored 1/4 cup water, plus 2 tbsp water 1 1/4 cup vanilla yogurt, lowfat 1/2 cup sugar 1/2 cup frozen egg substitute, thawed 1/2 tsp almond extract 2 tbsp almonds, chopped and toasted
Instructions:
Recipe by: Cooking Light, Guilt-Free Desserts Sprinkle gelatin over water in a saucepan; let stand for 1 minute. Cook over low heat, stirring until gelatin dissolves. Combine yogurt, sugar, egg substitute and almond extract in the container of a blender or food processor. Cover and process until smooth. Gradually add gelatin mixture; cover and process until well blended. Pour into 6 ounce custard cups. Chill until set. Sprinkle each with 1 teaspoon chopped almonds. (136 calories, 2.1g fat, 14% calories from fat)
