Avocado Citrus Salad Recipe
Ingredients:
1/2 cup fresh orange juice 2 tbsp olive oil 1 tsp fresh taragon minced* 2 pink grapefruit 1 fresh lemon,quartered 1/4 cup champagne vinegar 1 clove garlic,minced 2 heads bibb lettuce 2 ripe avocados
Instructions:
1. Combine orange juice, vinegar, olive oil, garlic and taragon*(1/4 teaspoon dried) in a covered container.Shake well and set aside until ready to serve salad. 2. Separate Bibb lettuce leaves. Gently wash and pat dry with a towel. Peel grapefruit and cut in half end-to-end. Slice into six half-moons, removing seeds. Cut avocados in half lengthwise and remove pits. Slice intop 6 crescents and remove peels. Spritz with fresh lemon to prevent browning. 3. To assemble salad, divide lettuce between 6 plates. Arrange four slices each of grapefruit and avocado on top of lettuce. Drizzle with dressing and serve. Prep Time: 30 minutes.
