Banana Muffins Recipe
Ingredients:
1 1/2 cup flour 1/2 cup sugar 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp lite salt (optional) 1/2 tsp cinnamon 1/2 cup egg beaters 2 bananas, large, mashed 2/3 cup skim milk 1/3 cup light corn syrup
Instructions:
Spray 12 muffin cups with a non-fat cooking spray. In a medium bowl combine dry ingredients. In a large bowl, beat Egg Beaters with a wire whisk. Stir in mashed bananas, milk and corn syrup. Add flour mixture, stirring only until blended. Spoon into muffin cups. Bake at 400 F. for 22 - 25 minutes. Cool 5 minutes in pan.
Per muffin: .23 g fat, 91 calories, 2.87 g protein, 53 mg cholesterol, 15.32 g carbo., 16.6 mg sodium
