Banana-Walnut Oatmeal Recipe
Ingredients:
1 cup skim or low-fat milk 1 pinch salt 1 cup quick oats 1 ripe banana, mashed 1 tbsp pure maple syrup -plus more to taste 1 tbsp chopped walnuts
Instructions:
In a saucepan over medium heat, combine milk, salt and 3/4 cup water; heat until almost boiling. Add oats and cook, stirring, until creamy, 1 to 2 minutes. Remove the pan from the heat and stir in mashed banana and 1 tablespoon maple syrup. Divide between 2 bowls, garnish with walnuts and a little more maple syrup and serve.
Makes about 2 cups, for 2 servings.
300 calories per serving: 12 grams protein, 5 grams fat (0.8 gram saturated fat), 54 grams carbohydrate; 75 mg sodium; 2 mg cholesterol; 3 grams fiber.
