Instructions:
1. Trim any fat from chicken breasts. Place in a single layer between two pieces of plastic wrap. Pound with a heavy skillet or rolling pin until flattened.
2. In shallow dish, combine flour, salt and pepper. Coat both sides of each breast with seasoned flour. In large nonstick skillet, over medium-high heat, heat oil. Add chicken breasts; cook about 4 minutes per side, or until well-browned and no longer pink in the center. Remove to a plate; cover and keep warm.
