Bell Pepper Nachos Recipe
Ingredients:
1/2 green bell pepper, seeded and cut into 6 strips 1/2 red bell pepper, seeded and cut into 6 strips 1/2 yellow bell pepper, seeded and cut into 6 strips 1/2 cup salsa 2 tbsp sliced ripe olives 3 tbsp shredded part-skim mozzarella cheese
Instructions:
Cut bell pepper strips crosswise in half. Place on ungreased broilerproof pie plate, 9 X 1-1/4 inches. Top with salsa, olives and cheese. Set oven control to broil. Broil with top 3 to 4 inches from heat about 3 minutes or until cheese is melted. 6 SERVINGS (6 NACHOS EACH) MICROWAVE DIRECTIONS: Place bell pepper pieces on microwavable plate. Top with salsa, olives and cheese. Cover with waxed paper and microwave on high 1 minute 30 seconds to 2 minutes, rotating plate 1/4 turn after 1 minute, until cheese is melted.
