Black-Eyed Peas With Greens & Smoked Tofu Recipe
Ingredients:
2 tsp canola oil 1 large onion, sliced 16 oz frozen black-eyed peas 16 oz frozen chopped mustard greens -or spinach 8 oz baked seasoned and smoked tofu -cut into 1/2-lnch dice 4 cup water 2 tsp hot pepper sauce -plus more to taste 1 tsp salt -plus more to taste freshly ground black pepper, to taste
Instructions:
1. In a 3-quart saucepan, heat oil over medium heat. Add onion and cook, stirring occasionally, until well browned, about 10 minutes. 2. Stir in peas, greens, tofu, water, hot sauce, salt and pepper; bring to a boil over high heat. Reduce heat to low, cover and cook until greens and peas are tender, about 25 minutes. Adjust seasoning with salt, pepper and hot sauce, if desired. Serve immediately.
MAKES 8 CUPS, FOR 6 SERVINGS.
