Blue Cheese Dressing (2) Recipe
Ingredients:
1/4 cup crumbled blue cheese -1 ounce 2 tbsp reduced-fat sour cream 2 tbsp reduced-fat mayonnaise 1/4 cup buttermilk 1 tbsp white-wine vinegar 1 tbsp chopped fresh parsley 1 tbsp chopped scallions salt & freshly ground black pepper, to taste
Instructions:
In a small bowl, whisk blue cheese, sour cream and mayonnaise. Stir in buttermilk, vinegar, parsley and scallions. Season with salt and pepper. (The dressing will keep, revered, in the refrigerator for up to 3 days.)
Makes about 2/3 cup.
15 calories per tablespoon; 1 gram protein; 1.4 grams fat (0.8 gram saturated fat); 1 gram carbohydrate; 75 mg sodium; 3 mg cholesterol; 0 grams fiber.
