Bran Muffins Recipe

Bran Muffins Recipe
Ingredients:
2 cup oat bran 1/4 cup firmly packed brown sugar 2 tsp baking powder 1/2 tsp salt 1 cup skim, soy or rice milk 2 egg whites, slightly beaten 1/4 cup honey or molasses (i use 1 blackstrap) 2 tbsp applesauce or prune puree 1 cup fruit (raisins, blueberries, 1 apricots, etc.) 1 (note: if using 'juicy' 1 fruits like berries, 1 decrease 1 applesauce/prune puree to 1 1 tbsp, unless you like 1 *really* 1 moist muffins!)
Instructions:
Heat oven to 425 degrees. Line 12 medium muffin cups with paper baking cups, or spray bottoms with Pam. Combine dry ingredients; mix well. Add combined milk, egg whites and honey; mix just until dry ingredients are moistened. Fill prepared muffin cups 3/4 full. Bake 15 to 17 minutes, or until golden brown.
