Chef Kerry Sear's Vegetable Burgers Recipe
Ingredients:
1 tbsp olive oil 1 cup minced onion 1 cup grated carrot 1 cup grated turnips 1 cup grated zucchini 1 cup grated beets 1/2 tbsp minced garlic 1/2 tsp ground cumin 1 tsp dill 1 tsp tarragon 1/4 cup instant oats 1/4 cup water 1 to 1 1/2 cups mashed 1 potatoes 1/4 cup chopped hazelnuts 1/3 cup cooked rice 1 salt & pepper to taste
Instructions:
Saute onion, carrots, turnips, zucchini, beets, garlic, cumin, and herbs until vegetables begin to wilt (3 - 5 minutes). Allow to cool slightly.
Soak oats for 5 minutes in water - drain & press out water. Add to vegetable mixture along with potatoes, nuts, and rice. Season with salt and pepper to taste. Form into 8 patties. Grill on well oiled grill for 3 -4 minutes each side or saute in olive oil until golden brown.
