Chickpea Salad Recipe
Ingredients:
1/4 cup minced parsley 1/4 cup minced onion 1 large clove garlic, minced or 1 pressed 6 tbsp lemon juice 1/8 tsp cayenne 1/2 tsp salt or to taste 1 1/2 cup drained chickpeas 1 1/2 cup sliced zucchini or yellow 1 crookneck squash 6 tbsp bean liquid from the can
Instructions:
Whisk together everything but the chickpeas and squash. Stir in the chickpeas and squash. Let marinate in the fridge for at least a few hours for flavors to blend.
