Curry Vinaigrette Recipe
Ingredients:
3 tbsp apple cider 2 tbsp cider vinegar 2 tbsp finely chopped shallots 2 tsp curry powder -preferably madras 1/2 tsp dijon mustard 1/2 tsp granulated sugar 1/4 tsp salt -plus more to taste freshly ground black pepper, to taste 2 tbsp walnut oil
Instructions:
In a small bowl, whisk cider, vinegar, shallots, curry powder, mustard, sugar, 1/4 teaspoon salt and pepper. Whisk in oil. Adjust seasoning with salt and pepper. (The vinaigrette will keep in the refrigerator for up to 1 day.)
MAKES 1/2 CUP.
