Easy Oven-Fried Chicken Recipe
Ingredients:
2 tbsp dry sherry 2 cl garlic, minced or pressed 1 lb chicken breasts, skinned & boned, and spli 1/2 cup soft whole wh. bread crumbs 2 tbsp cornmeal 1/2 tsp salt 1 tsp paprika 1/2 tsp pepper 1/2 tsp sage leaves 1/2 tsp thyme leaves 1/2 tsp basil 1 tsp salad oil
Instructions:
In a shallow bowl, combine sherry and garlic. Add chicken, turn to coat, and let stand for about 20 minutes. In another shallow bowl, combine bread crumbs, cornmeal, salt, paprika, pepper, sage, thyme and basil. Dip each chicken piece in crumb mixture to coat. Brush a rimmed 10- by 15-inch baking pan with oil. Arrange chicken, skinned side up, in pan. Bake, uncovered, in a 450 degree oven until meat is no longer pink in thickest part; cut to test (about 20 minutes). Serve hot or let cool to room temperature.
