Ingredients:
1 eggplant (cubed to 1 1/4*to*1/2 inch cubes) 1 can tomatoes (either use whole 1 and chop, of buy chopped) 1/2 package rice noodles (glass noodles) 1 precooked 1 salt (optional)
Instructions:
In microwave container, layer eggplant, salt, tomatoes, and rice noodles in that order. Microwave high until eggplant is to taste - it takes me 10 minutes on high. Mix everything and enjoy.
Variation: Use sticky rice instead of the noodles.
