Eight-Layer Appetizer Spread Recipe




Ingredients:

lettuce leaves
3/4 cup vegetarian refried beans
4 oz diced green chili peppers, drained
several dashes bottled hot pepper s
8 oz light dairy sour cream
1/3 cup salsa
3/4 cup chopped avocado
1/2 cup finely shredded reduced fat montere -or cheddar cheese -2 ounces
1/3 cup sliced green onion
1 cup chopped lettuce
1 small tomato, seeded and chopped -about 1/2 cup
10 oz light tortilla chips -about 8 cups

Instructions:

Partly line a serving plate with lettuce leaves. Stir together refried
beans, chili peppers, and hot pepper sauce in a small bowl. Spread bean
mixture over the lettuce leaves, making a layer about 1/4 inch thick.
Spread sour cream in a layer atop the beans. Spoon a layer of salsa atop
the sour cream; swirl salsa into sour cream. Sprinkle with avocado, cheese,
green onions, lettuce, and tomato. Serve with tortilla chips.

Makes 16 servings.
