Fat Free Burritos 2 Recipe




Ingredients:


MISTY SIMON


SALSA

2 small tomatoes, chopped
1/4 cup chopped onion
1 fresh jalapeno pepper, seeds remove, d
2 tbsp chopped fresh cilantro
1 dash crushed red pepper flakes
1/4 tsp salt
1 tsp vinegar

FILLING

1/2 lb 99% fat free ground turkey
1 cup rosarita no fat green chili and lim, e refried beans
1/4 cup salsa (fresh store bought may be su, bstituted)

ASSEMBLY

1 burrito filling
1 fresh salsa
6 mission fat free flour tortillas, fajita sized
1/2 cup healthy choice nonfat cheddar chees, e, shredded
1/3 cup knudsen fat free sour cream

Instructions:

For the salsa,
Coarsely chop the tomatoes, onion, jalapeno and
cilantro and process in food processor. Add red
pepper, salt and vinegar, process until mixture is of
small uniform chunks. Set aside.

For the filling,
Spray a nonstick frying pan with pam 1 time. Brown the
turkey meat along with the 1/4 cup of salsa. You may
wish to add a small amount of water, as ground turkey
cooks up very very dry and absorbs all the moisture
from the salsa. Add the beans. Heat and stir until
beans are heated through.

Assembly,
Place tortillas on a plate and cover with a wet paper
towel. Heat in microwave for 10-20 seconds. Sprinkle 1
rounded tablespoon of the chees on 1 side of each
tortilla. Evenly divide the burrito filling among the
tortillas. Fold each tortilla like a soft taco,
squishing the filling to fill the entire area. Serve
with salsa and fat free sour cream.

Note, may be frozen, but do not put fat free sour
cream on before freezing because when reheated, the
fat free sour cream gets a bad taste.

3 servings, two burritos each. Nutrition per serving:
346 cals; 1 g fat.
