Fresh Apple Salad Recipe
Ingredients:
2 cup cored pared diced apples 1/2 cup diced fresh oranges 1/2 cup diced pineapple (fresh or canned) 1/4 cup green seedless grapes, halved 1/4 cup dates, diced 1/2 cup diced celery 1 lemon juice 1/4 cup chopped pecans 1 dressing: 1 1/2 oz fat-free cream cheese 1 tbsp pineapple juice 1/2 cup cool whip light
Instructions:
Mix fruits and celery together and sprinkle with a little lemon juice, tossing to coat. Add nuts. To make dressing beat softened cream cheese with the pineapple juice, and fold in the Cool Whip Light.
Fruits may be prepared several hours ahead -- don't forget to toss to coat well with lemon juice. Refrigate dressing (in a seperate container) and fruits.
Just before serving, toss fruits with enough dressing to moisten. Remaining dressing keeps for serveral days in refridgerator.
