Fresh Pear Coffee Cake- Part 1 Recipe
Ingredients:
3/4 cup sugar 1/4 cup margarine, softened 1 tsp vanilla 3 egg whites or 1/2 cup cholesterol-free egg product 1 3/4 cup all-purpose flour 1 tsp baking powder 1/2 tsp ground cardamom 1/4 tsp salt 1 cup lowfat sour cream 2 cup chopped unpared pears - (about 2 medium) Streusel Glaze
Instructions:
Heat oven to 350 degrees. With nonstick cooking spray, spray rectangular pan, 13 X 9 X 2 inches. Beat sugar, margarine, vanilla and egg whites in large bowl on medium speed 2 minutes, scraping bowl occasionally. Mix flour, baking powder, baking soda, cardamom and salt; beat into sugar mixture alternately with sour cream on low speed. Fold in pears. Spread batter in pan. Sprinkle with Streusel. Bake 45 to 55 minutes or until wooden pick inserted in center comes out clean; cool. Drizzle with Glaze. 15 SERVINGS.
