Fruity Cheese Ball Recipe
Ingredients:
8 oz healthy choice ff cr. cheese softe, ned 2 tbsp sherry 4 oz h.c. ff cheddar cheese, shredded 1/4 cup dried appricots, choped 1/4 cup green pepper, finely chopped 1/2 tsp orange rind, grated 1/2 cup parsley, chopped 1 melba rounds 1 miniature rice cakes
Instructions:
Combine softened cream cheese and sherry, mixing until well blended. Add Cheddar cheese, apricots, green pepper and orange rind; mix well. Chill several hours; form into ball and roll in parsley. To serve, spread 1 tsp. on each melba round or rice cake.
