Jicama, Apple And Celery Root Slaw Recipe
Ingredients:
1/3 cup plain yogurt, lowfat 1/4 cup sour cream 3 tbsp green onion, minced (white part only) 4 tsp fresh lemon juice 2 tsp fresh cilantro, minced 1 tsp lemon peel, grated 1/4 tsp fresh ground pepper 1 large red apple 1 cup celery root, peeled & grated 1 cup jicama, peeled & grated
Instructions:
Mix all ingredients together except apple, jicama and celery root. Core the apple, but don't peel it. Grate it into the yogurt mixture (prevents browning) and, any remaining apple skin should be chopped and added to the mixture. Blend in the celery root and jicama. Let stand 1 hour before serving.
