Lemon-Poppyseed Muffins- Low-Fat Recipe




Ingredients:


JANA HOLSTEIN BXFK25C

1 3/4 cup all purpose flour
1/3 cup plus 2 t sugar
1 tbsp plus 2 t poppyseeds
2 tsp baking powder
1/4 tsp salt
1 cup skim milk
3 tbsp vegetable oil
1 tbsp grated lemon rind
1 tbsp fresh lemon juice
1 egg, slightly beaten
1 vegetable cooking spray

Instructions:

Combine first 5 ingredients in a large bowl; make a well in the center of
mixture. Combine milk and next 4 ingredients Stir well. Add to dry
ingredients, stirring just until moistened. Divide batter evenly amoung 12
muffin cups coated w/cooking spray. Bake at 400 degrees for 25 min. or
until golden brown. Remove from pan immediately & cool on wire rack.
Yield: 1 dozen. (143 cal. ea., 4.8 g fat ea.) Jana
