Lemon Sponge Pudding Recipe
Ingredients:
2/3 cup sugar 3 tbsp all-purpose flour 1 tsp grated lemon rind 1 cup 2% low fat milk 1/4 cup lemon juice 2 egg yolks, lightly beaten 2 egg whites
Instructions:
From Cooking Light, Jan/Feb 1991. Combine 1st 6 ingredients in a bowl; stir with a wire whisk. Beat egg whites (at room temperature) at high speed of an electric mixer until stiff peaks form. Gently fold egg whites into milk mixture.
Pour mixture into a 1-quart baking dish; place in a large, shallow pan. Add hot water to larger pan to depth of 1 inch. Bake at 325 degrees F for 55 minutes or until golden. Remove dish from water; let stand 10 minutes.
