Lowfat, Reduced Sugar Lemon Curd Recipe
Ingredients:
2 large eggs, beaten 3/4 cup sugar 1/2 tbsp butter 2 tbsp lemon zest 1/2 cup lemon juice, fresh 1/2 cup water 2 tbsp cornstarch 6 tsp equal sweetener
Instructions:
Recipe by: Misty Simon In top of a double boiler, combine beaten eggs, sugar, butter, zest and juice. Combine COLD water and cornstarch, and add with all the ingredients in the pan. Cook over simmering water for 15 minutes, stirring constantly until thick and smooth. Remove from heat. Stir in equal and allow to cool. Cover and refrigerate for 2 hours. After refrigeration, it will have become slightly firm. Stir until creamy and serve.
Makes approximately 1 cup.
Each 1 Tablespoon size serving has 60 calories and 1 gram of fat compared to 132 calories and 4.3 grams of fat in the original recipe.
