Lowfat Eggnog Recipe
Ingredients:
BETTER HOMES & GARDENS;11/91
4 cup skim milk 12 oz evaporated skim milk 4 each eggs 1/2 cup sugar 1 tsp vanilla
Instructions:
Heat milk, canned milk, eggs, and sugar over medium heat about 10 minutes, until slightly thickened. Do not boil. Stir over a bowl of ice water 2 minutes. Stir in vanilla; cover and chill 4-24 hours.
Add more skim milk if needed to achieve desired consistency. Top with ground nutmeg just before serving.
Per 1/2 cup serving: 99 cal, 1 gm fat.
Sylvia's comments: this had a nice eggnog flavor, but was just as thin as plain milk -- it didn't thicken at all.
