Lowfat Quinoa And Beans Recipe
Ingredients:
1 cup uncooked quinoa 2 cup chicken broth, de-fatted 1 red bell pepper, thin sliced 1 gr. bell pepper, thin sliced 1 medium onion, chopped coarsely 3 garlic cloves, minced 1 1/2 of small bunch of fresh cilantr, o (coriander) 1 can cowpeas, drained and rinsed use bl 1 freshly gr. pepper to taste 2 tbsp olive oil
Instructions:
Cook the quinoa according to directions except use chicken broth instead of water (vegetarians can use vegetable broth). Set aside. In the oil, saute the peppers, onions and garlic till softened, toss in fresh cilantro, rinsed cooked beans and cooked quinoa. Check for salt. Serve hot or cold, main dish, side dish, salad or anything.
