Ingredients:
1/2 cup reduced-fat mayonnaise - or light mayonnaise 1/2 cup mango puree -fresh or thawed frozen 1/4 cup light sour cream 1/4 tsp salt 1/8 tsp pepper 2 tbsp lime juice 8 oz medium shrimp, cooked -shelled and deveined 20 melba rounds or toasts
Instructions:
In small bowl, combine mayonnaise, mango puree, sour cream, salt, pepper and lime juice. Spoon mayonnaise mixture onto melba rounds; top with a shrimp.
Makes 20 servings. Preparation time: About 10 minutes.
