Mexican Chicken Soup Recipe
Ingredients:
4 chicken breasts, boneless and skinless (ab 2 can tomatoes, stewed, undrained 14.5 oz each 2 tsp bouillon, chicken, instant =or=- 2 cubes 4 oz green chilies, chopped & undrained 1 tsp chili powder 1/2 tsp ground cumin 1/4 tsp garlic powder 1/8 tsp ground red pepper 1 cup corn, whole-kernel, frozen 1 cup zucchini, chopped
PER SERVING
115 *cals 15 *gm protein 13 *gm carbo 1 *gm fat 9 *% of cals from fat 33 *mg chol 614 *mg sodium
Instructions:
In Dutch oven or large saucepan over med-high heat, combine 4 cups water and remaining ingredients except corn and zucchini; bring to a boil. Reduce heat to low; cover and simmer 30 minutes. Remove chicken, cut into cubes. Add chicken, corn, and zucchini to soup mixture; simmer 10 minutes longer. To serve, ladle into bowls. Makes 8 servings. Prep Time: about 10 minutes. Cooking Time: about 40 minutes.
