Mock Mayo Recipe
Ingredients:
1 large egg white 1 tbsp vinegar 1 tsp dijon mustard 1/2 tsp sugar (optional) 1/4 tsp salt
Instructions:
1 C low-fat cottage cheese
In clender, whip egg white, vinegar, mustard, sugar and salt one minutee until light and frothy. With blender running, spoon in cottage cheese; blend until smooth. Refrigerate at least one hour before serving.
