Mushroom Orzo Recipe
Ingredients:
1 cup dry orzo 1 small yellow onion,minced 1 tsp olive oil 1/2 lb shitake mushrooms 1 steamed and sliced 1 salt and pepper to taste 2 tbsp parsley,chopped coarsely 1 tbsp parmesan cheese
Instructions:
Cook orzo according to package instructions. Drain and rinse under cold water. Saute onions slowly in oil in a small pan. Cover with a tightly fitting lid, stirring often until the onions are translucent. Add mushrooms and saute until wilted, covering the pan if they look dry. Season with salt , pepper and parsley. Add the orzo to the mushroom mixture, stir briefly to reheat. Toss in Parmesan cheese. Per Serving:129 calories;1mg cholesterol;1.4gm fat;37mg sodium From USA Weekend Nov.1991 by Marth Stewart.
