No-Fat Banana Muffins Recipe
Ingredients:

1 no-stick cooking spray 1 1/2 cup flour 1/4 cup sugar 2 tsp baking powder, (look for lite) 1/2 tsp baking soda salt, optional 1/2 tsp cinnamon 2 egg whites 2 large ripe bananas, mashed 2/3 cup skim milk 1/3 cup corn syrup, (light or dark)
Instructions:
Spray 12 (2 1/2-inch) muffin cups with cooking spray. In medium bowl combine flour, sugar, baking powder, baking soda, salt and cinnamon. In large bowl, using a fork or wire whisk, beat egg whites lightly. Stir in mashed bananas, milk and corn syrup. Add flour mixture; stir until well blended. Spoon into prepared muffin cups. Bake in 400 deg. oven 22 to 25 minutes or until firm to touch. Cool in pan 5 minutes. Remove: cool on wire rack. Makes 12 muffins. Per serving: 0g fat, 0 mg cholesterol, 130 calories, 200 mg sodium (less vif you omit salt)
