Oat-Bran Raisin Muffins Recipe
Ingredients:
2 1/4 cup oat bran 1/4 cup brown sugar 2 tsp baking powder 1 1/2 tsp ground ginger 1/4 tsp black pepper 1/2 cup raisins 1/2 cup walnuts or raisins or other 1 fruit or nuts 1 egg equivalent 1/4 cup honey 3/4 cup warm skim milk or non-dairy 1 equivalent
Instructions:
Mix wet and dry ingredients in separate bowls. Combine and let set 10 minutes. Pour into lightly greased/pammed muffin tins. Bake at 375 degrees 15 minutes or until lightly browned.
