Ingredients:

1 cup texas chopped sweet onion
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 cup chopped pineapple
2 tsp chopped fresh cilantro
salt, to taste

Instructions:

In a medium non-reactive bowl, combine onion, peppers, pineapple, cilantro
and salt. Cover and refrigerate several hours to let flavors blend.

Makes 12 servings. Preparation time: About 15 minutes. Chilling time: About
3 hours.
