Pork Ragout Recipe
Ingredients:
1 lb lean boneless pork 1 tsp ground ginger 1/2 tsp ground coriander 1/4 tsp ground allspice 1 can low-sodium, (10-1/2 ounces) chicken broth 1 cup pitted prunes, cut into fourths 1/2 cup dried apricot halves, cut in half 2 cup hot cooked rice
Instructions:
Heat oven to 350 degrees. Trim fat from pork. Cut pork into 1-inch cubes. Place pork, ginger, coriander, allspice and broth in Dutch oven. Cover and bake 30 minutes. Stir in prunes and apricots. Cover and bake 30 to 45 minutes longer or until pork is tender. Stir before serving. Serve over rice. 4 SERVINGS (3/4 CUP RAGOUT AND 1/2 CUP RICE EACH).
