Pumpkin Bran Muffins Recipe
Ingredients:
1 1/2 cup flour 1/2 cup sugar 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp lite salt 1 tsp cinnamon 1/2 cup egg beaters 1 cup canned pumpkin 1 cup raisin bran cerial (or 1 c. shredd, ed bran flake cer 3/4 cup skim milk 1/2 cup light corn syrup
Instructions:
Spray 12 muffin cups with nonfat cooking spray. In a medium bowl combine flour, sugar, baking powder, bakin gsoda, salt, and sinnamon. In a large bowl, using a wire whisk, beat Egg Beaters. Stir in pumkin , cereal, milk and corn syrup. Add to flour mixture; stir until well-blended. Spoon into prepared muffin cups. Bake at 400 F. for 18-20 minutes. Cool in pan 5 minutes before removing.
Yield: 12 muffins
Per muffin: .1 g fat, 93 calories, 3.67 g protein, 0 mg. cholesterol, 17.38 g carbo. and 37 mg sodium
