Quick 'n' Easy Minestrone Recipe
Ingredients:
1 tbsp olive oil 1/2 small head green cabbage, shredded 1 cup chopped onions 9 oz frozen italian green beans 10 oz frozen lima beans 10 oz frozen sliced carrots 16 oz can coarsely chopped tomatoes 16 oz can cannellini beans, pureed 2 cup water 2 tsp dried basil 1 black pepper, to taste

Instructions:
In a large casserole, heat the oil until hot. Stir in the cabbage and onions; saute over medium-high heat until cabbage is wilted, 8 to 10 minutes.
Add the green beans, lima beans and carrots. Pour in the tomatoes <with juice>. Add the cannellini beans, water, basil, and pepper. cover and bring to a boil. Reduce heat; simmer for 30 minutes.
