Salmon Bisque Recipe
Ingredients:
1 large onion, diced 1 tbsp olive oil 2 tbsp flour 2 1/2 cup defatted chicken broth 1 1/2 cup tomato puree 1 lb salmon fillet, cut into 1/2 inch ch, unks 2 tbsp snipped fresh parsley 2 cup evaporated skim milk
PER SERVING

Instructions:
In a 3-quart saucepan, saute the onions in the oil until translucent, about 5 minutes. Add the flour and cook until light brown, about 3 minutes.
Add the broth, tomato puree, fish and parsley. Simmer for 10 minutes. Add milk and heat through.
