Smoked Salmon Spread Recipe
Ingredients:
1 cup ricotta cheese 2 oz smoked salmon, chopped 2 tbsp fresh dill, chopped 2 tbsp capers, drained 2 tsp lemon juice 2 tsp ketchup 1 tsp prepared horseradish 1 salt 1 pepper
Instructions:
In food processor or blender, puree ricotta until smooth. Add smoked salmon, dill, capers, lemon juice, ketchup and horseradish, using on/off motion. Process until lightly mixed. Season with salt and pepper to taste.
Use to spread on toast or to stuff mushrooms or cherry tomatoes or Belgian endive leaves. Smoked trout can be used instead of salmon.
