Ingredients:


WALDINE VAN GEFFEN VGHC42A

2 cl garlic, minced
1 jalapeno, halved
1 medium onion, chopped
3/4 cup scallions, sliced
3 french shallots, chopped
1 tomato, chopped
2 bell peppers, chopped
2 tbsp parsley, minced
1 lb small scallops
2 tbsp peanut oil
1 tbsp lemon peel, grated

Instructions:

In oil, saute garlic, jalapenos, onions, scallions, peppers, shallots and
tomatoes until onions are tender. Add scallops and cook until scallops are
done. Add lemon peel and parsley. Serve over hot rice. Source: Lightly
