Mediterranean Swordfish Steaks
Ingredients:
1/4 cup olive oil 2 tbsp fresh lemon juice 1 tsp dried oregano 1/2 tsp grated lemon rind 1/2 tsp crumbled dried rosemary 1/2 tsp salt 1/2 tsp freshly-ground black pepper 1 1/2 lb swordfish steaks, abt 1 thick
Instructions:
Mix olive oil, lemon juice, oregano, lemon rind, rosemary, salt and pepper in a resealable plastic bag. Add swordfish steaks; toss to coat. Marinate at room temperature 30 minutes, turning occasionally.
Prepare a medium grill. Cook steaks about 5 minutes per side for medium doneness.
This recipe yields 4 servings.
