Miso-Soy Glazed Salmon




Ingredients:

4 tsp lite soy sauce
1 tbsp atkins sugar-free pancake syrup
2 tsp red miso
1 garlic clove, pressed
1/2 tsp sesame oil
4 center-cut salmon fillets - (abt 1
1 = (2 wide by 1 thick)

Instructions:

Heat oven to 450 degrees. Combine all ingredients except the salmon in a
bowl. Stir to dissolve miso, set aside.

Heat a large ovenproof nonstick skillet over medium-high heat. Add
fillets, skin-side down. Press down lightly with a spatula to sear skin;
cook 3 to 4 minutes until skin is crisped.

Spoon half the sauce over fish. Transfer skillet to oven. Bake 6 minutes
for medium-rare doneness (bake longer, if desired). Spoon remaining sauce
over hot fish.

This recipe yields 4 servings.
