Reuben Sandwich
Ingredients:
8 slice atkins rye bread 2 tbsp butter, softened 1/2 cup coleslaw 12 slice corned beef - (abt 1/2 lb) 4 slice jarlsburg cheese - (abt 1/4 lb) 2 tbsp russian dressing
Instructions:
Butter each slice of bread.
For each sandwich: On unbuttered side of bread spread 2 tablespoons coleslaw, 3 slices corned beef, 1 slice cheese and 1 1/2 teaspoons dressing. Place second slice of bread, butter-side up, on dressing. Repeat to make total of 4 sandwiches.
On griddle, cook sandwiches, tented with foil, 6 minutes, turning once, until toasted golden. Serve hot.
This recipe yields 4 servings.

Comments: Substitute sauerkraut for coleslaw and French for Russian dressing as you desire.
