Salmon Pasta Salad
Ingredients:
15 1/2 oz canned alaska salmon 8 oz fusilli or macaroni cooked, drai, n, e, d & cooled 1 pt cherry tomatoes cut in half 2 cup sliced cucumber 1 cup mozzarella cheese cut into thin st, rips 1/2 cup chopped parsley 1/4 cup grated parmesan cheese
LEMON DRESSING
3/4 cup olive oil 1/4 cup lemon juice 2 garlic cloves, minced 1/2 tsp dill weed 1/2 tsp grated lemon peel 1 black pepper, to taste
Instructions:
Drain and flake salmon. Toss flaked salmon with remaining ingredients in large serving bowl. Toss with Lemon Dressing and serve.
Lemon Dressing: Whisk together ingredients until well combined.
