Spinach-Filled Stuffed Eggs




Ingredients:

12 hard-cooked eggs
1 package frozen chopped spinach - (10 oz)
1 = (or 1 bunch fresh spinach, cooke, d
1 chopped)
1/4 cup sugarfree mayonnaise
2 tbsp olive oil
2 tbsp freshly-grated parmesan cheese
1 salt, to taste
1 freshly-ground black pepper, to taste

Instructions:

Cook the spinach. Drain and squeeze dry, getting out as much water as
possible so spinach doesn't dilute the filling.

Peel eggs and cut in half. Mash yolks with spinach, mayonnaise, oil,
cheese, salt and pepper. Carefully fill each egg white half with the yolk
mixture. Cover with plastic wrap and refrigerate until well chilled.

This recipe yields 6 servings; 3 carb grams per serving.
