Bake, Lobster - Atkins Recipe










Ingredients:

1/3 cup butter
1 tbsp butter
2 medium scallion, finely chopped
1 clove garlic, pushed through a press
2 lb cooked lobster meat, bite-sized pie, ces, room t
1/2 cup atkins bread crumbs
1 cup pepper jack cheese, shredded
2 tbsp cilantro, chopped

Instructions:

Simple, elegant and delicious, this is one of those special-occasion
dishes. Mildly hot cheese and fresh cilantro compliment the buttery flavor
of lobster.

1. Heat oven to 400°F. Butter a 1 1/2-quart shallow baking dish or gratin
dish. Melt 1/3 cup butter in a small skillet, over medium-high heat. Sauté
green onions 3 minutes, until softened; add garlic and cook 1 minute more.

2. Place lobster meat in prepared baking dish and drizzle with garlic
butter. Toss to coat. Sprinkle with breadcrumbs and then with cheese. Dot
with remaining tbs of butter.

3. Bake 15 minutes, until lobster is hot and cheese is melted. Sprinkle
with cilantro.

The metaphor of the melting pot is unfortunate and misleading. A more accurate analogy would be a salad bowl, for, though the salad is an entity, the lettuce can still be distinguished from the chicory, the tomatoes from the cabbage.
