Bake, Spinach-Cheese - Atkins Recipe
Ingredients:
4 large eggs 3/4 tsp salt 1/2 tsp pepper 2 package frozen chopped spinach, thaw, squeeze dry 1 ctn (8 oz) whole milk cottage cheese 1 1/2 cup sharp Cheddar cheese (6 oz), shredded, packed 4 medium scallion, chop 3 tbsp Atkins bake mix 2 tbsp fresh parsley, chop
Instructions:
For variety, you can try feta or ricotta cheese in place of cottage cheese and add some chopped fresh dill. If you use feta, reduce the amount of salt.
1. Heat oven to 350°F. Butter an 8' square baking dish. Set aside. In a large bowl, beat eggs with salt and pepper. Add spinach, cottage cheese, Cheddar, medium scallion; bake mix and parsley; mix well.
2. Pour egg mixture into prepared dish. Bake 45 minutes, until center is set and top is golden brown. Let bake sit a few minutes before cutting into squares.
