Baked Artichoke-Parsley Cheese Squares Recipe










Ingredients:

1 jar marinated artichoke hearts - (12 oz, drained,
liquid reserved
4 green onions, finely chopped
2 garlic cloves, finely chopped
4 whole eggs, beaten
2 tbsp Atkins Bake Mix
1/2 tsp salt
1/4 tsp freshly-ground black pepper
8 oz Monterey jack or pepper jack cheese, shredded
2 tbsp chopped fresh parsley

Instructions:

Heat oven to 325 degrees. Chop artichokes and set aside. In a medium
skillet, heat reserved marinade liquid 2 minutes over low heat. Add green
onion and garlic; sauté 5 minutes, until softened.

In a mixing bowl, combine eggs, bake mix, salt and pepper. Thoroughly mix
in cheese, parsley, artichokes and onion mixture.

Transfer to an 8- or 9-inch square baking dish. Bake 30 minutes, until
set. Cool slightly before cutting into squares.

This recipe yields 8 servings.
