Beef, Prime Rib Of - Atkins Recipe
Ingredients:
3 lb beef rib eye roast (3-4), small end, well trimmed 1 tsp salt 1/2 tsp pepper 1 bunch watercress/arugula leaves, cleaned, stemmed
Instructions:
A simple recipe, your essential piece of equipment here is a reliable meat thermometer.
1. Heat oven to 350°F. Place roast, fat side up, on rack in shallow roasting pan. Insert ovenproof meat thermometer in thickest part. Roast 1 1/2 hours for medium rare (135 F. on thermometer), 1 3/4 to 2 hours for medium (150º F ). Remove from oven; let roast rest for 15 minutes (to allow juices to redistribute. Temperature of roast will rise an additional 10º F.)
2. Add 1/2 cup water to roasting pan, and scrape up dried-on bits with a wooden spoon; strain. Serve this beef jus alongside the sliced beef. Garnish with watercress.
